The concept behind Podin Recipes is to offer a platform for experienced and aspirants with a high level of passion for cooking and food generally, to learn the Art of creating delicious recipes in a simplified and detailed manner. Metaphorically, cooking is an Art, the kitchen serves as the artists workstation, all the required recipes can be said to be the paint, brush… the finished work is usually visible on a canvas which in this case is the serving platter.

How to sear T-bone steak and Sweet potato with sauteed herbs.

 

Welcome back to Podin Recipes

Today we present our signature main course (T-bone steak with sweet potato & sautéed herbs)

Recipe:

– T bone steak
– Onion
– Cherry tomato
– Garlic
– Fresh rosemary
– Sweet potato
– Salt & black pepper
– Green bean
– Olive oil
– Butter
– Carrot

Cooking process :

– cut the herbs(cherry tomato, onion & garlic) into two parts.
– Cut the Sweet potato into a rondelle(round) shape
– Season the T-bone steak with salt and black pepper

– in a hot pan, add olive oil and sear both sides of the steak for 3 minutes
– After flipping the steak over to the other side, add garlic, fresh thyme, and onion and baste with butter.
– When the steak is ready, let it rest for about a minute.

– In a pot of boiling water, add the potato, carrot, and green bean.
– The green bean should be cooked for less than 1 minute and dipped In a bowl of cold water to cool the temperature(this process is known as blanching)
– Cook the potato for 6 minutes and sear both sides in a hot pan with butter to form a crust(hardened surface)
– Cook the carrot till it completely softens and place it in a blender with butter and blend till it forms a puree.
– For more flavor, add the carrot puree into a pan and mix with the jus from the seared steak
– Pan-fry the blanched green beans with honey.
– Char/grill the cherry tomato surface till it forms a caramelization.

The easiest way to cook penne pasta with braised goat meat

 

RECIPE

Goat meat – 480g
Green bean – 65g
Cherry tomato – 114g
Onion – 94g
Bell pepper – 85g
Scotch bonnet – 19g
Garlic – 52g
Ginger – 12g
Chopped beef – 217g
Prawn – 95g
Tomato paste – 1 tbsp
Thyme – 2 tsp
Curry – 1 tsp
Salt
Basil leaves
Thyme
Cheddar cheese

PROCEDURE :

– cut the herbs (onion, bell pepper, cherry tomato, scotch bonnet, green bean, garlic, and ginger)
In a pot of boiling water, add salt, olive oil, and cook the penne pasta for 7 minutes until it becomes Al dente(cooked to be still firm when bitten.)

BRAISING THE GOAT MEAT :

– in a hot pot, add oil, scotch bonnet, chopped onion, garlic, ginger, salt, basil leaves, tomato paste, thyme, seasoning cube, goat meat.
– Roast the meat on high heat for 6 minutes.
– Add 1 cup of water and cook on low heat for 30 minutes.
– Optionally, you can choose to pan-fry the goat meat with 1 tbsp of butter & mayonnaise on high heat for 3 minutes or serve as it is.

STIR-FRYING THE PASTA

– In a hot pan, sauté the prawn with a pinch of salt and set aside.
– sauté the beef with salt and honey(optional) and set aside

– sauté all the herbs (garlic, onion, ginger, green bean, scotch bonnet, cherry tomato & bell pepper on high heat for 3 minutes.
– Add the sautéed prawn and beef into the mix with Bay leaf.
– Add the al dente pasta, sprinkle a pinch of salt and curry powder
– Mix over high heat for 5 minutes, and it’s ready for consumption.
– Serve the pasta with braised goat meat, grated cheddar cheese, and have a good healthy meal

How to make a Jumbo Burger

For our very first content, we present to you the signature Jumbo Burger with Irish potato & bell pepper sauce/dressing.

RECIPE :

– bell pepper
– Large bread
– Honey
– Salt
– Fresh scotch bonnet
– Mustard
– Seasoning cube
– Lettuce
– Fresh garlic
– Fresh onion
– Fresh tomato
– Cheddar cheese
– Butter
– Oil
– Ground beef
– Mayonnaise
– Bacon

PROCEDURES :

Step 1 – prepping

– Slice the tomato, onion & bell pepper(as portrayed in the video).
– Peel and cut the Irish potato into wedges.
– Grate the cheddar cheese.
– In a bowl, mix the beef with garlic cloves, Scotch Bonnet, chopped onion, seasoning Cube, mustard, mayonnaise & salt.
– Form the mixed minced beef into a rectangular shape(or any of your choice).

COOKING PROCESS

– Pan-fry the beef on both sides.
– Add the grated cheese and a little sprinkle of water around the edges of the pan and cook for 1 minute.
– Sweat the bacon.
– Deep fry the Irish potato wedges.
– Saute the bell peppers with salt, garlic, and honey till it softens. Blend smoothly to form a puree and place in a squeeze bottle.
– Cut the bread into two pieces and spread with butter.
– Char or Broil the areas over high heat till you have the desired color.

Chicken potato soup with blueberries & shredded carrots

RECIPE:

100g onion 🧅  17g garlic 🧄  100g carrots 🥕  180g fresh tomato 🍅  23g scotch bonnet(less spicy; 15g) 🌶 218g sweet potato 🍠  670g cubed chicken 🐓  120g blueberries 🍒 100g unsalted butter 🧈 12g fresh thyme 🌿 16g fresh ginger  5tbsp natural honey 🍯 3tbsp sea salt 🧂 A mix of 2tbsp bbq sauce, 2tbsp  mayonnaise, 1tbsp mustard 🥣 3cups of water 💧💧💧 1cup cooking cream 🥛

PROCEDURE

  • Chop the herbs(onion, carrots, ginger, garlic, scotch bonnet & tomato) and blend smoothly.
  • To marinate the chicken;
  • Add the cubed chicken, thyme, salt, a mixture of bbq sauce, mayonnaise & mustard, honey, a portion of the blended herbs, oil, and mix thoroughly.
  • To Build flavor for the sauce; Add butter into a hot pot, then add chicken bones, fresh thyme, the blended mix, water, and slow cook for 15mins.
  • Filter the bones out and preserve the liquid(broth) which is packed with flavors from all the ingredients added.
  • Add butter into a hot pan and fry the chicken till it has a brownish crust and filter it into a bowl.  The butter used to fry the chicken has lots of flavors stores in as well so beware to preserve it.
  • In a hot pot, add the extracted broth & butter(used to fry the chicken).
  • Add cooking cream, honey, salt & slightly mix before slow cooking it for another 10mins.
  • To thicken and sweeten the sauce; In a separate pot, boil the sweet potato with thyme, salt, butter, and slow cook.
  • When it’s softened, use a wooden spoon to mash it smoothly.
  • Then grate it into the slow-cooked sauce and mix thoroughly.
  • Add the fried chicken into the sauce and mix.
  • After 10 mins, turn the heat off and add any crunch of your choice. In this recipe, we utilized Blueberries to modify the taste which gave it a balanced flavor.
  • Serve hot and enjoy.
  • grate carrots and sprinkle on the dish after serving.
  • Even better if you have a glass of wine alongside.

 

Note :

  • if you prefer a light version of the soup, add more water to your satisfaction and slow cook for a longer period.
  • It’s best to cook on low heat to allow a proper blend of all the ingredients.
